Turkey Quesadillas
| 1 tbsp/15 ml | Oil |
| 1/2 lb/250 g | Turkey breast, cut into thin strips |
| 1 | Large sweet green pepper, thinly sliced |
| 1/2 | Medium red onion, thinly sliced |
| 1 tsp/5 ml | Chili powder Salt, pepper, oil and hot pepper sauce, to taste |
| 8 | Large flour tortillas |
| 3 cups/ 750 ml | Shredded Monterey Jack cheese Salsa, optional |
Turkey is not only a great main course dish, but also a great choice as a healthy appetizer. This month’s recipe, Turkey Quesadillas, fills both rolls, and is another recipe destined to make turkey a family favourite!
DIRECTIONS: In a large non-stick skillet over medium-high heat, heat oil, add turkey and cook, stirring frequently until no longer pink. Stir in green pepper, onion and chili powder. Cook until onion just begins to soften. Season with hot pepper sauce, salt and pepper. Remove turkey mixture to a bowl. Wipe out skilled with paper towel. Brush one side of each tortilla with a little oil. Reduce heat to medium, place one tortilla, oiled side down in skillet. Spoon one quarter of turkey mixture over tortilla and sprinkle with + cup (175 mL) cheese. Place another tortilla over top, oiled side up. Cook on both sides until lightly browned and cheese is melted. Repeat with remaining tortillas. Cut each into 6 wedges. Serve hot with salsa if desired.
Makes 24 wedges (about 8 servings.)
