Turkey Loaf with Spanish Sauce

Turkey Loaf:  
1 tbsp/15 mL Oil
1 Medium onion, chopped
2 Cloves garlic, minced
2 lbs/1 kg Ground turkey
1 Egg, beaten
1/2 cup/125 mL Milk
1/2 cup/125 mL Dry breadcrumbs
1 tsp/5 mL Salt
1/4 tsp/1 mL Pepper
Spanish Sauce  
2 tsp/10 mL Olive oil
1 Medium onion, chopped
1 Large clove garlic, minced
1/2 cup/125 mL Sweet green pepper, diced
3 tbsp/45 mL Tomato paste
1 28oz/796 mL diced tomatoes
1 Bay leaf
  Salt and pepper - to taste
2 tbsp/30 mL Parsley, finely chopped

Directions:
In large skillet over medium heat, heat oil, add onion and cook, stirring occasionally until soft.  Stir in garlic and cook 1 minute longer.  In large bowl, combine turkey, onion, garlic, egg, mil, breadcrumbs, salt and pepper; mix well.  Lightly pack mixture into greased 8-1/2 x 4-1/2 inch (22 x 12 cm) loaf pan.  Bake at 350 deg. F (180 deg. C) 1 to 1-1/4 hours or until juices run clear.  Slice and top with Spanish Sauce.  *Spanish Sauce:  In large skillet over medium heat, heat oil, add onion, garlic and green pepper.  Cook, stirring occasionally, 7 minutes.  Stir in tomato paste, tomatoes (including juice), bay leaf, salt and pepper.  Reduce heat and simmer 30 minutes or until sauce thickens.  Remove bay leaf, stir in parsley.  May be made ahead and reheated.
